Functional Food Ingredients

The hop cone has been used in beer and thus consumed by humans for many thousands of years. Hops have a range of properties ideally suited not only for beer production but also for use in other food products. Typical applications include:

  • Flavoring – Having been used to give flavor and aroma to beer for centuries, hops can contribute a broad range of flavor and aroma profiles which can be utilized in a variety of foods.
  • Preservation – Originally hops were added to beer for their preservative properties. The antibacterial compounds have been isolated and characterized, and are active at very low levels. Although not limited to these applications, hop products have been used as a preservative in prepared meat products, beverages and fresh foods with outstanding results.
  • Functional Food Additives – Among the interesting properties of hop compounds are their ability to function as bittering agents, foam enhancers, and as foam stabilizers.
